Everyone loves the potato. This foodstuff might seem mediocre on first glance but when you begin to list all it's marvellous incarnations (chips, baked spud, roasties, mash, and so on) it's easy to see why potatoes are universally scoffed.
There's an amusing story of Chris Voigt, an executive director of the Washington State Potato Commission, who vowed to eat nothing but 20 potatoes a day for 2 months. It was found that potatoes are "a decent and inexpensive source of vitamin C, vitamin B6, potassium, magnesium and, with the skin left on, dietary fiber". However, they are lacking a little in Vitamin A, which helps your vision.
